We?ve been hearing for years that Americans want to eat healthier food, although their actual food choices haven?t always borne that out. Still, healthy, high-quality menu choices have definite appeal for plenty of consumers, and Greek concepts are based on the healthier Mediterranean diet that has been widely touted. Some Greek concepts deemphasize the Greek aspects of the cuisine, giving menu items more recognizable names but still including the true Greek name to educate their customers. This need to educate some consumers about what exactly Greek food is can pose a challenge in some markets, but this is unlikely to be an issue in more urban areas.

A Lower-Cost Alternative

Most Greek restaurant franchise opportunities are fast casual, with traffic split roughly evenly between dine-in and takeout. In most cases, these restaurants will split about half and half between lunch and dinner. The average unit is usually 1,500 to 1,600 square feet, and build-out costs can run as low as $150,000 to $200,000 if an existing restaurant space is converted. However, some brands utilize more seating and will require a larger footprint, with correspondingly higher costs. Some concepts provide more leeway to customize menus than is typical in franchising.
